E ci sono tantissimi gusti tra cui scegliere: cioccolato, caffè, marmellata, pistacchio, limone, caramello salato e tanti altri. I ricordi da sfogliare mi sono stati offerti dalla <a href="http://www.pixum.it/">Pixum</a>, conoscete quest'azienda? Io l'ho scoperta da pochissimo, ora vi racconto ;)<br />

<a name='more'></a>Qualche settimana fa la Pixum, azienda che opera del settore della stampa fotografica, mi ha contattata per chiedermi se volessi recensire un loro prodotto fotografico, il fotolibro, ed io ho accettato volentieri. Devo dire che non solo è stato divertente realizzarlo, ma è stata un'occasione per ritrovare foto cadute nel dimenticatoio e riportare a galla una marea di bellissimi ricordi.<br />
Realizzarlo è stato proprio facile, addirittura l'ho fatto dal mio smartphone tramite un'applicazione apposita (ma si può realizzare tranquillamente anche dal pc con la stessa semplicità, tramite un loro <a href="http://www.pixum.it/fotolibro">software</a>).<br />

Ecco le dosi per due tazze:<br />

40 g cacao amaro<br />
12 g amido di mais<br />
20 g zucchero<br />
250 g latte di soia o delattosato<br />
<br />
Nb: potete usare anche il cacao zuccherato, in tal caso eliminate i 20 g di zucchero<br />

<ol style="-webkit-text-stroke-width: 0px; font-style: normal; font-variant: normal; font-weight: normal; letter-spacing: normal; line-height: normal; orphans: auto; text-align: start; text-indent: 0px; text-transform: none; white-space: normal; widows: auto; word-spacing: 0px;">
<li><span style="color: #999999; font-family: inherit;">In un pentolino (possibilmente dal fondo spesso) setacciare cacao, amido e zucchero</span></li>
<li><span style="color: #999999; font-family: inherit;">Aggiungere il latte e mescolare</span></li>
<li><span style="color: #999999; font-family: inherit;">Una volta che il composto sarà uniforme e lo zucchero sarà sciolto mettere sul fornello a fuoco basso e mescolare costantemente</span></li>
<li><span style="color: #999999; font-family: inherit;">Una volta raggiunta la densità voluta versare nelle tazze e servire</span></li>

<b>Procedimento:</b><br />
<br />
<ol>
<li>Accendere il forno a 180°;</li>
<li>Sbucciare le pere e tagliarle a fettine o a spicchi (a seconda del vostro gusto), eliminando la parte centrale coi semi;</li>
<li>Tritare il cioccolato e fonderlo a bagnomaria con 100 g di margarina vegetale;</li>
<li>Separare i tuorli dagli albumi;</li>
<li>Unire i tuorli ai restanti 80 g di margarina e allo zucchero e sbattere a mano o con le fruste elettriche finchè non si ottiene un composto omogeneo;</li>
<li>Aggiungere il cioccolato (solo una volta che sarà tiepido)</li>
<li>Mischiare il lievito alla farina ed aggiungere al composto continuando a lavorare;</li>
<li>In un'altra ciotola montare a neve gli albumi;</li>
<li>Una volta che saranno belli compatti aggiungere al primo composto e lavorare delicatamente con una spatola facendo movimenti dal basso verso l'alto, cercando di non smontare gli albumi;</li>
<li>a questo punto ungere ed infarinare una tortiera;</li>
<li>versare metà dell' impasto;</li>
<li>realizzare uno strato di pere;</li>
<li>versare la seconda parte dell'impasto;</li>
<li>cuocere per 45 minuti in forno statico preriscaldato a 180° (verificare la cottura infilando uno stecchino, se esce asciutto la torta è pronta).</li>
<li>Lasciar raffreddare prima di servire.</li>

400 g mascarpone senza lattosio<br />
4 uova<br />
300 g zucchero bianco<br />
1 sacchetto di savoiardi<br />
8 tazzine di caffè (io uso il decaffeinato)<br />
8 tazzine di acqua<br />
cacao amaro in polvere (qb)<br />

PROCEDIMENTO:<br />

<li>separare albume e tuorli</li>
<li>montare a neve l'albume e metterlo da parte</li>
<li>montare i tuorli con lo zucchero finchè il composto non diventa spumoso</li>
<li>aggiungere il mascarpone mescolando lentamente</li>
<li>aggiungere l'albume e mescolare delicatamente con una spatola per non smontare il tutto</li>
<li>preparare il caffè</li>
<li>prendere un recipiente con il fondo piatto ed unire il caffè e l' acqua</li>
<li>immergere i savoiardi,uno alla volta, nella bagna al caffè (un istante, non di più) e posizionare uno ad uno nella teglia dove vogliamo realizzare il tiramisù (nb: devono essere ben affiancati, non dovete lasciare spazi)</li>
<li>una volta completato il primo strato di savoiardi ricoprire completamente con la crema al mascarpone</li>
<li>spolverizzare con il cacao amaro e realizzare il secondo strato di savoiardi</li>
<li>ricoprire nuovamente con la crema al mascarpone e poi col cacao amaro</li>
<li>mettere in frigo ed attendere due ore prima di servire</li>

<li>Aggiungere i pezzetti di cioccolato fondente</li>
<li>Foderare una teglia di carta da forno e versare l'impasto a cucchiaiate (nb: spaziare bene le cucchiaiate perche' in cottura i biscotti si allargheranno)</li>
<li>Cuocere per circa 10-15 minuti (verificare il grado di cottura con la prova stecchino)</li>

<b>PROCEDIMENTO:</b><br />

<b>a) la base:</b><br />
<br />
<ol>
<li>preriscaldare il forno a 150°</li>
<li>lavorare insieme la farina, il lievito, lo zucchero e la margarina, fino a che il composto non diventa sabbioso</li>
<li>aggiungere il tuorlo e rendere il composto omogeneo</li>
<li>mettere l'impasto in una tortiera senza cerniera e con le sponde abbastanza alte (io ho usato una tortiera in silicone ma va bene anche di un altro materiale purche' non sia a cerchio apribile, poi capirete perche')</li>
<li>pressarlo bene in modo che diventi uniforme</li>
<li>infornare e cuocere per 20-25 minuti, finche' la superficie non diventa dorata</li>
<li>lasciar raffreddare prima di farcire</li>

<li>sbattere con le fruste la crema di formaggio,lo zucchero e la vanillina</li>
<li>aggiungere un uovo alla volta e lavorare a velocita' alta finche' non diventi spumosa</li>
<li>versare la crema sulla base (fredda)</li>
<li>mettere la tortiera in una pirofila piu' grande e riempire questa d'acqua per due terzi</li>
<li>mettere il tutto in forno e cuocere per circa 40 minuti, deve risultare dorata fuori ma ancora morbida dentro </li>
<li>lasciar raffreddare e mettere in frigo una notte prima di servire</li>

<li>sciogliere il cioccolato e la margarina a bagnomaria</li>
<li>in una terrina sbattere le uova con lo zucchero e la vanillina</li>
<li>una volta che l'impasto sara' omogeneo aggiungere il cioccolato e amalgamare</li>
<li>aggiungere la farina,il sale ed il lievito in tre volte</li>
<li>foderare una teglia grande con carta da forno</li>
<li>versare l'impasto a cucchiaiate avendo cura di distanziarle bene una dalle altre (i biscotti tenderanno ad allargarsi durante la cottura)</li>
<li>cuocere nel forno preriscaldato per circa 10-15 minuti (i biscotti saranno cotti quando la superficie sara' lucida e spaccata)</li>
<li>lasciar raffreddare prima di servire</li>

<li>aggiungere le polveri in due volte, alternandole con il latte e facendo amalgamare bene prima di aggiungere la seconda parte</li>
<li>ungere una la teglia rettangolare da plumcake (9x17cm circa)</li>
<li>cuocere un'ora circa nel forno gia' caldo verificando la cottura con la prova stecchino: se infilandolo al centro del dolce rimane asciutto è pronto</li>
<li>lasciar raffreddare completamente prima di tagliare e servire</li>

<li>foderare una teglia rettangolare con carta da forno (la teglia deve essere di circa 30x25 cm) e versarvi l'impasto </li>

<li>aggiungere il miele e continuare a frustare finche' non sara' perfettamente amalgamato</li>

<li>Una volta che la base sara'fredda togliere la pellicola e tagliare a meta' in modo che si ottengano due rettangoli uguali</li>

<li>coprire con il secondo rettangolo di pasta biscotto e schiacchiare delicatamente al centro in modo che la panna si distribuisca bene su tutta la superficie</li>
<li>tagliare i bordi eventualmente irregolari</li>
<li>mettere in frigo per almeno 3 ore</li>
<li>passate le tre ore tagliare in rettangoli (dovrebbero uscire circa 8 Kinder fetta al latte)</li>

<b>PROCEDIMENTO:</b><br />
<b><br /></b><b>FASE 1 - la torta:</b><br />

<ol>
<li><span style="background-color: white;">Accendere il forno a 180 gradi in modo tale che quando avrete finito di impastare la torta avra' raggiunto la temperatura desiderata.</span></li>
<li><span style="background-color: white;">Mettere il cioccolato tritato a sciogliere con il latte e l'olio (di semi) <a href="http://dolciricettesenzalattosio.blogspot.it/2012/06/la-cottura-bagnomaria-cose.html" target="_blank">a bagnomaria</a>, girando ogni tanto e l</span><span style="background-color: white;">asciandolo poi raffreddare.</span></li>
<li><span style="background-color: white;">Con le fruste lavorare uova e zucchero.</span></li>
<li><span style="background-color: white;">Aggiungere la farina, il sale e</span><span style="background-color: white;"> il cioccolato (una volta raffreddato); il lievito per ultimo.</span></li>
<li><span style="background-color: white;">Preparare la tortiera con stampo apribile da 25 cm ungendola con margarina vegetale e cospargendola di farina e mettere in formo preriscaldato a 180 gradi per circa 40 minuti.</span></li>
<li><span style="background-color: white;">Verificare la cottura con lo stecchino.</span></li>
</ol>

<b><br /></b><b>FASE 2 - il ripieno:</b><br />

<ol>
<li><span style="background-color: white;">Montare la panna con lo zucchero a velo.</span></li>
<li><span style="background-color: white;">Quando la torta si sara' sfreddata tagliare a meta' con un lungo coltello e farcirla con uno strato di crema di nocciole e uno di panna.</span></li>

<b>FASE 3 -</b> <b>la copertura:</b><br />
<b><br /></b>A questo punto non resta che preparare la<a href="http://dolciricettesenzalattosio.blogspot.it/2012/06/creme-ganache-senza-lattosio.html" target="_blank"> Creme Ganache</a>.<br />
<br />
<span style="background-color: white;">Una volta che si sara' raffreddata d</span><span style="background-color: white;">istribuirla sulla torta con una spatola e metterla in frigo.</span><br />

La torta Kinder Delice sara' pronta quando la Creme Ganache si sara' solidificata.<br />

<li>Separare i tuorli dagli albumi</li>
<li>In una terrina sbattere i tuorli con 2 cucchiai di acqua bollente</li>
<li>aggiungere gradualmente 50 g di zucchero sbattendo fino ad ottenere una crema</li>
<li>Montare gli albumi a neve fermissima</li>
<li>aggiungere gradualmente lo zucchero rimasto</li>
<li>aggiungere i tuorli, la farina ed il lievito e mescolare delicatamente con la frusta a mano o con un cucchiaio facendo movimenti dal basso verso l'alto per evitare di non smontare gli albumi</li>
<li>aggiungere a piccole dosi la margarina liquefatta tiepida</li>
<li>Ungere ed infarinare una tortiera con cerchio apribile di 24 cm di diametro</li>
<li>Versare l'impasto e cuocere in forno preriscaldato a 180° per 30 minuti circa</li>

<li>Tagliare la torta raffreddata a metà ottenendo 2 dischi</li>

<li>inumidire con un po' di bagna</li>
<li>distribuire la crema di ricotta</li>
<li>bagnare il secondo disco e adagiarlo sulla crema</li>
<li>Porre la torta in frigorifero per almeno due ore</li>
<li>Prima di servire spolverizzare di zucchero al velo</li>

<li><span style="font-family: inherit;">aggiungere il sale e la scorza d'arancia</span></li>
<li><span style="font-family: inherit;">sciogliere lo zafferano nel latte e versare gradualmente nella ciotola con la farina cominciando a lavorare (con le mani o con l'impastatrice)</span></li>
<li><span style="font-family: inherit;">schiacciare le patate e aggiungerle all'impasto</span></li>
<li><span style="font-family: inherit;">sbattere le uova ed aggiungerle</span></li>
<li><span style="font-family: inherit;">lavorare finche' non diventa un impasto omogeneo</span></li>
<li><span style="font-family: inherit;">aggiungere <u>gradualmente</u> l'acqua, il succo dell'arancia e l' acquavite e lavorare a lungo finche' l'impasto non diventa morbido ed elastico</span></li>
<li><span style="font-family: inherit;">a lavorazione finita coprire la ciotola con un panno di cotone e lasciar levitare finche' la sua dimensione non raddoppia (1 ora e mezza circa)</span></li>

<li><span style="font-family: inherit;">una volta lievitato riempire una pentola capiente dai bordi alti con abbondante l'olio di semi</span></li>
<li><span style="font-family: inherit;">riempire una ciotola con acqua calda che servira' ad inumidirsi le mani affinche' l'impasto non si attacchi alle dita</span></li>
<li><span style="font-family: inherit;">preparare un piatto con sopra dei fogli di carta assorbente dove metteremo le zeppole dopo la frittura e una ciotola con abbondante zucchero semolato per cospargerle</span></li>
<li><span style="font-family: inherit;">una volta che l'olio sara' caldo inumidirsi le mani e prendere una pallina d'impasto</span></li>
<li><span style="font-family: inherit;">fare un foro al centro con le dita allargandolo il piu' possibile ed immergere la pasta nell'olio caldo facendola dorare da entrambi i lati </span></li>
<li><span style="font-family: inherit;">mettere a scolare la zeppola nella carta assorbente e ripetere questo procedimento per ogni zeppola (consiglio di friggerne poche per volta per evitate che si attacchino)</span></li>
<li><span style="font-family: inherit;">passare le zeppole nello zucchero semolato</span></li>
<li><span style="font-family: inherit;">mangiare :)</span></li>

<li style="margin: 0px 0px 0.25em; padding: 0px;"><span style="color: #666666; font-family: inherit;">Versare con un cucchiaio il composto nei pirottini riempiendoli per 2/3 (non di piu' perche' lievitando in cottura il muffin potrebbe bruciarsi nella superficie a contatto con la piastra superiore)</span></li>
